Another of our favorite recipes:


Basil Chicken & Pasta
1/2 pound of angel hair pasta
olive oil
1/2 cup finely chopped onion
1 TBSP minced garlic
3-4 chicken breasts, cut into chunks
1 can Hunts diced tomatoes w/ basil, garlic & oregano
1 - 1 1/2 TBSPs dried basil
salt, pepper
Grated Parmesan cheese (kind sold in the refrigerated section in plastic bags)

1. In a large pot, cook angel hair according to package. Meanwhile in a skillet, heat oil. Toss in chicken, sprinkle with salt & pepper and cook until no longer pink. Add onions and garlic. Cook for 5 or so minutes, until onions are soft.
2. Sprinkle basil all over the chicken mixture. Add in diced tomatoes with their juice. If you want a bit of heat, sprinkle in a very small amount of red pepper flakes. Cover skillet and simmer for a few minutes.
3. When pasta is cooked, drain & return to pot. Spoon into bowls and top with chicken/tomato mis and grated Parmesan cheese.
